History
While traditional pesto has its roots deeply embedded in Italian cuisine, the adaptation of using Cuban oregano offers a fresh and exciting variation. Originating from tropical regions like the Caribbean and parts of Central and South America, Cuban oregano, also known as Indian borage, Spanish Thyme, or Mexican mint, brings its own distinct flavor profile to the table. Although not a part of the original Ligurian pesto (discussed here), this herb's inclusion adds a delightful twist that pays homage to the rich culinary traditions of the Caribbean and Latin America... and most importantly to my Cuban culture!

The pungent aroma and bold taste of Cuban oregano complement the other ingredients harmoniously, creating a symphony of flavors that tantalize the taste buds call to the stomach.

Growing Cuban Oregano in Florida
If you're lucky enough to reside in sunny Florida, cultivating Cuban oregano for pesto is a simple and rewarding endeavor. This resilient herb thrives in warm, sunny climates and well-drained soil, making it an ideal addition to your garden or kitchen windowsill. Plant your Cuban oregano in a partially shady spot with good airflow, and water it regularly, allowing the soil to dry out between waterings. I rarely water mine and it continues to produce despite the El Niño year we had, making this plant a great choice for water-wise gardening. With proper care, you'll soon have an abundant supply of fresh Cuban oregano ready to harvest for all your pesto-making adventures.
Did You Know?
There are different types of cultivars of Cuban oregano, each providing slightly different flavors and requiring different amounts of sun. I find that plantied the variegated and tri-color cultivars in shade produces healthier plants, while the green type does well with some morning sun and afternoon shade.
