Longevity spinach is a great perennial green to add to your food forest or kitchen garden.

Nutritional information: Different parts of the plant are edible raw in salads and smoothies or cooked in stir-fries and soups. When heated, longevity spinach has a viscous consistency and may leave a sticky residue akin to okra or Malabar spinach. It is rich in vitamins A, C, and E, and in fiber.
Care: Part sun, drought tolerant. Add thin layer of compost monthly during growing season, prune to fit the space as needed.
Plant hardiness zone: Reported to be perennial in zones 8-11.
Use: Can use the leaves in cooking in place of spinach or other greens. Makes a great mounding perennial for the garden up to 1.5 feet high in part sun.
